The grapes are harvested in the morning, avoiding the excessive heat of the afternoon, in order to preserve the aromas and reduce the extraction of colours.
For the last ten years, Le Hameau des Vignerons de Carcès has invested in state-of-the art cellar equipment to obtain optimum quality:
- Draining, pneumatic pressing equipment (respecting the grape).
- A cooling unit to control fermentation temperatures and preserve aromas.
- Ageing of part of the wine in oak casts in the respect of tradition.
